Our owner Jerry, created this week's recipe, featured at the recent San Benito Olive Festival. It was the clear favorite of all who stopped by our booth for a taste.

Jerry's Famous Dip

8.5 oz bottle Oils of Paicines Balsamic Vinegar 

8.5 oz bottle Oils of Paicines Extra Virgin Olive Oil

3 cloves fresh garlic

Salt (to taste)

1/2 teaspoon fresh ground pepper

1/2 teaspoon chile flakes

Directions: Squeeze fresh-peeled garlic through garlic press. Mix with Balsamic vinegar. Add salt, pepper and chile flakes. Place in small covered container and shake well. Refrigerate for 2-4 hours.

To Use: Allow vinegar mixture to return to room temperature. Spoon Balsamic vinegar mixture into flat bowl. Cover with Oils of Paicines Extra Virgin Olive Oil (about 2-3 parts oil to one part vinegar) Serve with freshly cut baguette (or bread of choice).

For Mexican Flavor Dip: Instead of ground pepper, substitute crushed cumin seeds and finely minced fresh Thyme and/or Oregano (1/2 teaspoon each).
