Oils of Paicines is a small, family run business located in the foothills near Hollister, California, just a stones throw from Pinnacles National Park. We pride ourselves in the special TLC we give to the production of our 100% Organic Extra Virgin Olive Oil, ranch related products and especially to customer service.
Oils of Paicines has grown to hundreds of olive trees from humble beginnings and is led by a pair of local doctors with a passion.
As two physicians who appreciate the numerous health related properties of olive oil, their gourmet sensibilities led them to several companion products, including superb balsamic vinegars, discovered while traveling to Modena, Italy. We also offer several full flavored gourmet mustards that New Yorker Barbara, claims stand head and shoulders above the rest. Our White Peacock Bath and Body line was founded by Barbara in an attempt to find high quality, natural products to pamper her at the start and end of each day.
When you visit our ranch, you are sure to see Misael, the hardest working man ever created! Not only does he tend to our olive trees and annual harvest, but cares for our menagerie of animals, handles the maintenance, repairs and on-going projects here at the ranch. A mild mannered guy, Misael is always there when we need him, no matter how busy he is. He is loved by all!

Although bottled under our label, this balsamic vinegar is actually an 8 year old balsamic condimento made by a producer of fine balsamic vinegar in Modena, Italy. Our owners, Barbara and Jerry, visited Modena during the grape harvest and while there, noted the short window of time when the grapes should be harvested to lock in the special qualities used to produce the grape must. Trebbiano and Lambrusco grapes are used to obtain this special extract (the must). After harvesting, the must is aged in a set of small casks of special woods including oak, chestnut and cherry until the liquid has acquired the unique dark amber color and the perfect balance of sweet and sour. The balsamic condimento has a lower acidity than regular balsamic vinegars, with a sweet taste and a fruity aroma. It offers just the right sweetness and acidity to partner with our mellow, yet fruity, Oils of Paicines Extra Virgin Olive Oil.
Production of Balsamic Vinegar is a long family tradition in the Caselli family, as the business has been passed down from father to son for generations. The vinegar is made from grape must (a juice) obtained from Trebbiano grapes. It is first cooked in a boiler over a direct flame to obtain the proper concentration. After cooling, it is filtered and placed in the "Mother Cask". The cooked must is then transferred from the "Mother Cast" to the largest barrel in a group of barrels made from various woods, possibly oak, cherry or chestnut. The vinegar is gradually moved from the largest to the smallest barrels as it is aged. To be called 'Aceto balsamico tradizionale de Modena', a vinegar must be left in the barrels for a least twelve years. To be known as 'Extravecchio', it must be aged for over 25 years. Our vinegar is aged for 8 years. The Consortio in Modena closely regulates the terminology, the quality, the labeling and bottling of these vinegars. If a vinegar is not aged for at least 12 years, it is by law called 'Condimento'; thus, our product is so termed. Try on pound cake, vanilla bean ice cream or pears and cranberries with gorgonzola cheese. This vinegar inspires infinite possibilities!
Our organic olive leaf tea has antioxidant and anti-inflammatory properties. It is caffeine free and has a pleasant and mild flavor. Simply break the brittle leaves and steep in hot water for 10 minutes.
